Potato-SaladEDITORIAL – First of all, let me start by asking all of you to go to my website and check out my new meal plans.  They really have been a big success.  I have two plans that you can choose from, small or large meal plan.  Sounds like you’re getting a meal from a school cafeteria, doesn’t it?  Well, I can promise you it will not taste like your cafeteria experience.  You can choose your choose of casserole, salad, and bread on each plan.  The small feeds about four and is $65.  The large feeds about 8-10 and is $90.  This is such a great thing to do for people instead of flowers or just do for yourself.  We can deliver for an extra charge.  These meal plans have become very popular.  Also, you can just order a la carte as well.

OK, now for a fabulous recipe.  I have made this recipe numerous times and it is always a hit.  I recently made if for a doctor’s office when we also did pimento cheese sliders and it was a hit.  Here it is and enjoy!!

Creamy Southwestern Potato Salad

6-8 Servings

  • 1/2 cup buttermilk
  • 1/4 cup mayo
  • 1 TBS lime juice
  • 1 1/2 tsp. cumin
  • 1/4 tsp. cayenne pepper
  • 2 pounds potaotes
  • 1 cup corn
  • 1/2 cup onion
  • 1 14-ounce can of hearts of palm
  • 2 tomatoes
  • 1/2 cup cilantro
  • 1 avocado

Whisk buttermilk, mayo, lime, cumin, and cayenne.  This is the good stuff!!  Cook potatoes until tender.  I use fingerling potatoes.

Add corn.  I grill my corn.  It really makes a big difference.  Cut if off the cob and add to potatoes.  Add, onion, hearts of palm, tomatoes, and avocado.

This is a great potato salad.  The days are getting warmer. (I think)  Give it a try the next time you cook out.  It would be great with your hamburgers or ribs.
