EDITORIAL – Wow!  What a crazy week and weekend.  I think it is time to get back to normal at our house if that is possible.  Our oldest son left for boot camp this week and I feel like I have just been living in a bubble and waiting for this day to come.  It is a good day and a little sad as well.  I think the best thing for me to do is get back to cooking, researching recipes, and writing these blogs.
I was thinking about some different appetizers to make and came across a recipe I would like to share.  I know most of you have a scalloped potato recipe that you like and here is another way to use it.  Make your favorite recipe as usual and after it is cooked and cooled, then refrigerate overnight.
Here is where the appetizer comes into play.
  • Cut the potatoes into small squares and place on a baking sheet.
  • Bake until heated through and then skewer with a bamboo pick.
Oh my, what a great appetizer.  By the way, I use gruyere cheese in my scalloped potatoes.  Place them on a tray and garnish with thyme.  I think your guest will be surprised by this dish and delighted.
